- Vinification_ part of the grapes were harvested with a slight overripeness. A soft pressing and a cold pre-maceration were carried out which was followed by the start of the alcoholic fermentation. The wine was then transferred to 2nd and 3rd passage barriques of Allier and Troncais French oak where it completed the malolactic fermentation and aged for 12 months. At the end of the refinement and after careful tastings, the best barriques were selected and combined to create the final mass destined for bottling. Refine in the bottle for at least 6 months before being put on the market.
